Description
El Yucateco Achiote Paste is a traditional Mexican seasoning paste made with ground annatto seeds and a blend of spices. Closely associated with the cuisine of Mexico’s Yucatán Peninsula, achiote brings a distinctive earthy, savoury flavour and characteristic deep red colour to a wide variety of dishes.
Available in 100g and 1kg sizes, it is an easy way to prepare authentic Mexican-style marinades and is particularly well suited to pork, chicken and beef.
Traditional Yucatecan Flavour
Achiote has long been an important ingredient in Yucatecan and Mayan-influenced cooking. One of its best-known uses is cochinita pibil, where achiote paste is combined with citrus and seasonings to create a richly flavoured marinade for slow-cooked pork.
It can also be used to add colour and depth to grilled meats, tacos, sauces, stews, rice dishes and other Mexican-inspired recipes.
How to Use Achiote Paste
For a simple marinade, blend a portion of the paste with citrus juice, vinegar or water until it reaches the desired consistency. Orange or lime juice works particularly well with the earthy flavour of achiote.
Coat your chosen meat with the prepared marinade and allow the flavours to develop before cooking. The amount used can be adjusted according to the recipe and desired strength of flavour.
